Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs (900g)
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 2 tsp paprika
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper up to 1/2 tsp for heat
  • 0.25 cup lime juice (60ml) about 2 limes, plus wedges for serving
  • 2 tbsp olive oil
  • 3 bell peppers, sliced thick added in the last hour
  • 1 large yellow onion, sliced thick added in the last hour
  • 12 flour tortillas, warmed for serving

Equipment

  • 6-quart slow cooker
  • Sheet pan for the broiler finish

Method

  1. Mix all the spices together. Rub the chicken all over with the spice blend.
  2. Place the chicken in the slow cooker. Drizzle with lime juice and olive oil.
  3. Cover and cook on LOW for 4 hours.
  4. Add the thick-sliced peppers and onion. Cover and cook 1 hour more on LOW, until the vegetables are tender-crisp and the chicken is cooked through.
  5. Remove the chicken and slice it into strips. Return it to the pot and toss with the peppers and juices.
  6. Spread everything on a sheet pan and broil 3 to 4 minutes for charred edges.
  7. Serve in warm tortillas with sour cream, guacamole, cheese, pico de gallo, and plenty of lime wedges.

Notes

Tips: Slice peppers thick so they hold up. Add them late or they go limp. The broiler finish adds the char that makes fajitas taste like fajitas. Squeeze fresh lime over everything at the end.
Storage: Refrigerate up to 4 days. Reheat chicken and peppers in a hot skillet to crisp back up. Freezes up to 3 months.
