Ingredients

  • 1.5 lbs ground beef (680g) or ground turkey
  • 1 medium yellow onion, diced
  • 1 can black beans, undrained (425g) 15-oz can
  • 1 can pinto beans, undrained (425g) 15-oz can
  • 1 can corn, undrained (425g) 15-oz can, or 1.5 cups frozen
  • 1 can diced tomatoes, undrained (795g) 28-oz can
  • 1 can tomato sauce (225g) 8-oz can
  • 1 can diced green chiles (115g) 4-oz can
  • 2 packets taco seasoning 1-oz packets, about 3 tbsp each
  • 1 packet ranch seasoning 1-oz packet
  • 2 cups shredded cheddar for topping
  • 1 cup sour cream for topping
  • 3 cups tortilla strips or crushed chips for topping

Equipment

  • 6-quart slow cooker (7-quart for doubling)
  • Large skillet, for browning the beef

Method

  1. In a large skillet over medium-high heat, brown the ground beef with the diced onion until the beef is cooked through and the onion is soft, about 8 minutes. Drain off any excess fat.
  2. Transfer the beef and onion to a 6-quart slow cooker. Add the black beans, pinto beans, corn, diced tomatoes, tomato sauce, and green chiles, all undrained. Sprinkle in the taco seasoning and ranch seasoning. Stir well.
  3. Cover and cook on LOW for 6 to 8 hours (or HIGH for 3 to 4 hours), until hot, bubbly, and the flavors have melded.
  4. Stir the soup and taste for seasoning. Ladle into bowls and set out toppings: shredded cheddar, sour cream, tortilla strips, avocado, jalapenos, cilantro, and lime wedges.

Notes

Tips: Do not drain the cans; the liquid becomes the broth. Brown the beef first for better flavor and texture. Doubles easily in a 7-quart slow cooker. Storage: Refrigerate up to 5 days; freezes up to 3 months. Nutrition is estimated per serving, before toppings.
