Ingredients

  • 2 lbs boneless skinless chicken breasts (900g)
  • 1 cup low sodium chicken broth (240ml)
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp red pepper flakes optional
  • 0.75 cup oil-packed sun-dried tomatoes (130g) drained and chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream (240ml) added at the end
  • 4 oz cream cheese (115g) softened, added at the end
  • 1 cup freshly grated parmesan (100g) added at the end
  • 0.25 cup fresh basil leaves, torn for serving

Equipment

  • 6-quart slow cooker

Method

  1. Season the chicken with Italian seasoning, garlic powder, salt, black pepper, and red pepper flakes if using. Place in the slow cooker.
  2. Add the chicken broth, sun-dried tomatoes, and minced garlic around the chicken.
  3. Cover and cook on LOW for 4 to 5 hours, until the chicken is tender and cooked through.
  4. Remove the chicken to a plate. Whisk the heavy cream, cream cheese, and parmesan into the hot cooking liquid until smooth and silky.
  5. Return the chicken to the sauce, spooning sauce over each piece. Cover and cook 30 minutes more on LOW so the flavors meld.
  6. Serve over mashed potatoes, pasta, or rice with plenty of sauce. Scatter torn basil over the top.

Notes

Tips: Use oil-packed sun-dried tomatoes, not dry-packed. Add dairy at the end to prevent curdling. Grate the parmesan fresh so it melts smoothly. Reheat gently, never on high heat.
Storage: Refrigerate up to 4 days. Reheat low and slow with a splash of cream. Freezing is not recommended for the finished dish; freeze before adding dairy instead.
